Ingredients
- 2 cucumber
- 2 carrots
- 100g soya bean sprouts
- Apple cider vinegar (normal vinegar would work as well if apple cider is not to your liking)
- 3 tablespoons sesame oil
- Toasted sesame seeds
Method
- Remove seeds from cucumber.
- Julienne the carrots and cucumbers.
- Mix carrots and cucumber in a bowl. Add about 2 tablespoons apple cider vinegar and a pinch of salt.
- Cover and leave overnight to pickle in refrigerator.
- Blanche soya bean sprouts.
- Drain liquids from the pickle mixture.
- Mix in bean sprouts.
- Add sesame oil.
- Add toasted sesame seeds.
- Toss to your hearts content prior to serving.
