Food Notes

This may come as a surprise to many, but you can actually mix any two or three different sauces together without the flavours clashing. For instance, you can mix Maggi tomato sauce, Lingam’s chili sauce and a Thai sauce and voila! you’ve got your own barbecue sauce. Just make sure that the sauce base consists of garlic, olive oil and onion. Most sauces already contain these ingredients, so you can’t go wrong. Serve a mild sauce for meats that have been marinated and a cream sauce for seafood and plain meats. To thicken a sauce, blend a potato and add it into the sauces.

The Country Platter

Ingredients

  • Paprika
  • Pepper
  • Garlic
  • Onions
  • Olive Oil
  • Ginger
  • Red wine (optional)
  • Lemon
  • 100g chicken/beef/seafood (per person)

Method

  1. Blend the garlic, onions and ginger. Then strain and mix the juice with paprika and pepper. Add this to olive oil (never use cooking oil) or red wine. Coat your meat/seafood with this marinade and refrigerate overnight.
  2. Squeeze a lemon over the meat before putting it on the grill. Serve with your homemade sauce.

Vegetable Fiesta

Ingredients

  • Capsicum, sliced
  • Cheese, cubed
  • Baby carrots
  • Cherry tomatoes
  • Button mushrooms
  • Olive oil
  • Pepper
  • Dill
  • Prawns (optional)

Method

  1. Combine the dill, olive oil and pepper in a bowl. Let the vegetables soak in the marinade for 10 minutes before grilling. Grill for 2-3 minutes. Serve with dressing.

Food Notes

  • Capsicum is a must at barbecues as it enhances the flavour of the meat and also reduces the need for pepper in the seasoning. Always serve the vegetables on a skewer and alternate the spicy vegetables (capsicums) with the mild ones (tomatoes). Put cubes of cheese in between. The heat will cause the cheese to caramelise and draw out the flavours of the other vegetables.
