Makes: About 1 quart (enough for 8 servings)
Ingredients
- 1 cup durian (just the flesh)
- 2 cups full cream milk
- ¼ cup sugar
- ¼ tsp salt
- 4 egg yolks
Method
- Heat milk and durian in sauce pan for about 10 minutes over low heat. The mixture might bubble a bit at the edges but avoid boiling.
- Remove from heat and process in a food processor until mixture turns smooth. Set aside.
- Whisk egg yolks and sugar until smooth.
- Whisk 1/3 of durian milk mixture into egg mixture and whisk until even.

When you bake cookies and they come out too hard, simply put the cookies in a bag with a piece of bread overnight. The cookies will absorb the moisture out of the bread and will be soft in the morning!

If you want to remove fat from soup or stew but can’t wait for it to chill and congeal, drag a slice of bread across the surface of the broth to soak up as much grease as possible.

Save an over-salted dish by adding 2 raw potatoes, cut in half, into the pan 10 minutes before the end of the cooking time. They will absorb the excess salt.
