Last week, while having dinner with my parents, we noticed that mooncakes were already on sale. Mom made a remark about how fast time flies and it seems mooncakes are becoming available earlier and earlier with each passing year.

I got this recipe off a close friend. The only modification I have made to it is reducing the sugar content. As I mentioned before, I am very particular about how much sugar and salt my family consumes!
I have a lot of fun baking this pie! The choice of fruits is entirely up to you so play around with the different combinations of colours, textures and tastes. I like using strawberries, peaches and kiwi because the fruits’ respective colour and taste complement each other and more importantly, the cheese filling. The most time consuming bit for most first-timers would probably be slicing the fruits and arranging them. It is so easy to get carried away when you are ‘designing’ your pie but this is also a great time to explore your creativity!
