Ingredients
- 1 packet of dried yee mee
- 250g chicken, sliced
- 250g prawns
- 200g fishcake, sliced
- 500g choy sum
- 2 tbsp garlic, chopped
- 2 tsp thick black sauce
- 1 tbsp soya sauce
- 750 ml chicken stock
- 5 tbsp cooking oil
- Salt to taste
Method
- Heat oil in a pan. Add garlic and stir till brown.
- Add sliced chicken, prawns and fishcake.
- Pour in chicken stock. Add the yee mee, black sauce and soya sauce. Cook for 5 minutes then add choy sum.

Ingredients
- 250 g Spaghetti, boiled until al-dente
- 2 tbsp garlic, chopped
- 4 pieces dried chili
- 6 tbsp olive oil
- 50 g ikan kurau salted fish, pan-fried and pounded to flake
- 300 ml chicken stock
- ½ tsp parsley, chopped
Method
- Heat up the oil in a pan. Add the garlic, dried chili, parsley and salted fish. Stir for a few minutes.
- Add the stock followed by pasta. Cook for 10 minutes and add salt to taste.
Food Notes
- Sprinkle some romano or parmesan cheese if preferred. Chopped ham can also be added.

There was a TV drama series about a man, who for many years, went through many struggles and failures, endured great suffering and personal tragedies, but eventually overcame tremendous odds to be the most renowned tea producer and merchant in one of China’s tea-producing regions.
After being judged the best tea producer in an annual competition, the man was asked to make a speech. He stood before the crowd and spoke with heartfelt emotion and conviction. The entire scene was very moving, but one thing he said jumped out at me.

Ingredients
- 2 pieces chicken thigh, chopped into 3 parts each
- 4 pieces chinese mushroom, halved with stem removed
- 5–6 strips foo chok (dried beancurd), cut 2-3 inches lengthwise
- 6-8 pieces wan yue (fungus)
- 1 piece ikan kurau salted fish (approximately 1 square inch), shredded
- 10-12 whole green peppercorns, crushed
- 1 length chinese sausage (optional), skin removed and cut into bite-sized pieces
- ½ clove garlic, crushed
- 2 inches ginger, crushed
- 1 tbsp light soya sauce
- 2 tbsp chinese rice wine (optional)
