I’m a fan of one-pot meals like stew, but the simmering can take a while especially if you’ve thrown meat into it. So I decided to introduce something a little simpler. These are the fares you want to throw together if you’ve just got home and your guest is already driving up your street!
The Devils on Horseback make a great starter or hors d’oeuvre. The magic lies in the bacon, which must be either streaky or smoked. Pair it with prunes and you get an unusual sweet-salty flavour. Wrap it around mussels and mask the tang of seafood. The first time I served these, people who claimed to dislike prunes and mussels were make a beeline for seconds! Serve it with aperitifs, as its piquancy can overpower the delicate taste of fine wine.

Preparation Time: 15 minutes
Cooking Time: 5 minutes
Serves: 4
Ingredients
- 8 canned smoked mussels
- 8 pitted prunes
- 8 rashers of smoked streaky bacon
- 8 1″ by 1″ strip of Edam cheese
- 16 toothpicks
Method
- Oil a baking tray. Cut each rasher of bacon in half and set aside.
- Wrap one slice of halved bacon around a mussel and secure it with a toothpick. Do the same with three more mussels. With the remaining four mussels, pair each with a slice of cheese before repeating the above process. Do the same for the prunes.

Serves: 4
Ingredients
- ½ packet of spagettini or angel hair pasta or other pasta of choice
- Seafood of choice cleaned and cut
- 3 teaspoons of extra virgin olive oil
- Salt and pepper to taste
For the pesto
- 1 bag of fresh basil
- 5 heaped tablespoons of fresh, grated Parmesan cheese
- ½ cup of extra virgin olive oil
- 4 heaped tablespoons of lightly toasted pine nuts
- 4 cloves of garlic, chopped
- Juice of ½ a lemon
- Salt and pepper to taste

Serves: 4
Ingredients
- 2 small packets of double or whipping cream
- 4 passion fruit
- 2 cups of flour
- ½ a block of cold butter (about 125gms), diced
- 2 tablespoons of rolled oats
Method
- Pre-heat the oven at a moderate temperature. Rub the flour, oats and butter together with to form a coarse, sand-like consistency. Don’t knead the mixture. Just toss with your hands so that the butter is broken down to smaller pieces and coated evenly with the flour and oats. Do it quickly so the butter doesn’t melt and get oily. Bake the mixture for 10-15 minutes or until it is golden, fragrant and crunchy.
