Egg-celent Potato Salad

Ingredients

  • 1kg potatoes
  • 3 hard boiled eggs
  • ¼ cup raisins
  • 4-5 tbsp mayonnaise
  • Salt and pepper to taste
  • A handful of English parsley (finely chopped)
  • Bacon bits

Method

  1. Boil the potatoes until cooked, skin and cube them into bite sizes. Allow to cool.
  2. Mash the eggs with a fork and set aside.
  3. Mix all the ingredients together in a bowl, EXCEPT the bacon bits. Chill in fridge before serving.
  4. Sprinkle liberally with bacon bits prior to serving.
