Ingredients
- 1kg potatoes
- 3 hard boiled eggs
- ¼ cup raisins
- 4-5 tbsp mayonnaise
- Salt and pepper to taste
- A handful of English parsley (finely chopped)
- Bacon bits
Method
- Boil the potatoes until cooked, skin and cube them into bite sizes. Allow to cool.
- Mash the eggs with a fork and set aside.
- Mix all the ingredients together in a bowl, EXCEPT the bacon bits. Chill in fridge before serving.
- Sprinkle liberally with bacon bits prior to serving.
