Smoked Salmon on Abalone (Mushroom)

Smoked Salmon on Abalone (Mushroom)Serves: 4

Ingredients

  • 150g smoked salmon
  • 200g king abalone mushroom

Dressing (mix together)

  • ½ cup extra virgin olive oil
  • ¼ cup red wine vinegar
  • 1 tablespoon dijon-style mustard

Method

  1. Slice the abalone mushroom into thick slices.
  2. Blanche the mushrooms.
  3. Arrange on a plate with smoked salmon.
  4. Drizzle dressing over salad and serve.

Food Notes

  • While I blanched the mushrooms, you can also grill them if you prefer to add a bit more crunch to your starter.Lightly brush with extra virgin olive oil before grilling.
  • There will be extra dressing.Save it for other salads.
