Ingredients
- 150g smoked salmon
- 200g king abalone mushroom
Dressing (mix together)
- ½ cup extra virgin olive oil
- ¼ cup red wine vinegar
- 1 tablespoon dijon-style mustard
Method
- Slice the abalone mushroom into thick slices.
- Blanche the mushrooms.
- Arrange on a plate with smoked salmon.
- Drizzle dressing over salad and serve.
Food Notes
- While I blanched the mushrooms, you can also grill them if you prefer to add a bit more crunch to your starter.Lightly brush with extra virgin olive oil before grilling.
- There will be extra dressing.Save it for other salads.
