Serves: 4
Ingredients
- 6 cups chicken stock (1 cube chicken stock dissolved in 6 cups of water)
- 100g white button mushroom
- 100g swiss brown button mushroom
- 100g shitake mushroom
- 1 carrot
- 3 capsicums (try to get different colours)
- 1 celery
- 2 large white onions
- a few sprig of french tarragon
Method
- Remove the stalks from the button mushrooms and slice them.
- Slice the shitake mushrooms.
- Cut the carrot, capsicums and celery into chunks.
- Cut the onions into quarters.
- Boil chicken stock and add in mushrooms, carrots, capsicums, celery and onions.
- Lower heat and let it simmer for 2 hours.
- Add french tarragon and let it sit for about 10 minutes.
Food Notes
- There is no fixed recipe for minestrone.Traditionally it is done with a mix of whatever seasonal vegetables was handy.
- Be adventurous and try this with different stocks and combination of vegetables.
