Minestrone Soup

Minestrone SoupServes: 4

Ingredients

  • 6 cups chicken stock (1 cube chicken stock dissolved in 6 cups of water)
  • 100g white button mushroom
  • 100g swiss brown button mushroom
  • 100g shitake mushroom
  • 1 carrot
  • 3 capsicums (try to get different colours)
  • 1 celery
  • 2 large white onions
  • a few sprig of french tarragon

Method

  1. Remove the stalks from the button mushrooms and slice them.
  2. Slice the shitake mushrooms.
  3. Cut the carrot, capsicums and celery into chunks.
  4. Cut the onions into quarters.
  5. Boil chicken stock and add in mushrooms, carrots, capsicums, celery and onions.
  6. Lower heat and let it simmer for 2 hours.
  7. Add french tarragon and let it sit for about 10 minutes.

Food Notes

  • There is no fixed recipe for minestrone.Traditionally it is done with a mix of whatever seasonal vegetables was handy.
  • Be adventurous and try this with different stocks and combination of vegetables.
