Ingredients
- 2 capsicums (chopped)
- 2 bombay onions (chopped)
- 2 chillies (chopped)
- ½ can button mushroom (chopped)
- 20g bacon bits
- 12 cream crackers
- 12 cheese slices
- Cooking oil
Method
- Using a pan, fry onions and garlic until fragrant (and onions start turning a bit translucent).
- Add capsicum, chillies, mushrooms and bacon bits. Continue frying for about another minute or until filling starts to brown a bit.
- Remove from pan and set aside.
- Arrange cream crackers on a plate and spoon filling over them. Distribute evenly.
- Top each cracker with a slice of cheese.
- Microwave on high for 30 seconds to 1 minute. This serves to melt the cheese and reheat the filling. Serve immediately.
Food Notes
- The filling mixture can keep for a while in the refrigerator, thus can be prepared ahead of time.
- Substitute crackers with corn chips and cheese slices with shredded or grated cheese for a more authentic nachos.
- Instead of microwaving, grilling the nachos for about a minute or so will work as well and it will also brown the cheese to a nice crispy crust.
