Nachos

Ingredients

  • 2 capsicums (chopped)
  • 2 bombay onions (chopped)
  • 2 chillies (chopped)
  • ½ can button mushroom (chopped)
  • 20g bacon bits
  • 12 cream crackers
  • 12 cheese slices
  • Cooking oil

Method

  1. Using a pan, fry onions and garlic until fragrant (and onions start turning a bit translucent).
  2. Add capsicum, chillies, mushrooms and bacon bits. Continue frying for about another minute or until filling starts to brown a bit.
  3. Remove from pan and set aside.
  4. Arrange cream crackers on a plate and spoon filling over them. Distribute evenly.
  5. Top each cracker with a slice of cheese.
  6. Microwave on high for 30 seconds to 1 minute. This serves to melt the cheese and reheat the filling. Serve immediately.

Food Notes

  • The filling mixture can keep for a while in the refrigerator, thus can be prepared ahead of time.
  • Substitute crackers with corn chips and cheese slices with shredded or grated cheese for a more authentic nachos.
  • Instead of microwaving, grilling the nachos for about a minute or so will work as well and it will also brown the cheese to a nice crispy crust.
