Warm Rocket Salad

Ingredients

  • Rocket leaves, approx 250 - 300g
  • 1 large onion, sliced thinly
  • 10 cloves of fried garlic (from the pangrattato)
  • 100 g streaky bacon, or about 4-5 pieces
  • A handful of cherry tomatoes
  • 1 tbsp balsamic vinegar
  • 2-3 tbsp olive oil
  • A knob of butter

Method

  1. Fry onion slices in butter over slow heat until brown and caramelised.
  2. Fry the streaky bacon until crisp and brown.
  3. Assemble rocket leaves and tomatoes on a plate, and top with the garlic and caramelized onions. Crumble the fried bacon on top.
  4. Drizzle olive oil and balsamic vinegar over the salad and toss thoroughly.
