Ingredients
- Rocket leaves, approx 250 - 300g
- 1 large onion, sliced thinly
- 10 cloves of fried garlic (from the pangrattato)
- 100 g streaky bacon, or about 4-5 pieces
- A handful of cherry tomatoes
- 1 tbsp balsamic vinegar
- 2-3 tbsp olive oil
- A knob of butter
Method
- Fry onion slices in butter over slow heat until brown and caramelised.
- Fry the streaky bacon until crisp and brown.
- Assemble rocket leaves and tomatoes on a plate, and top with the garlic and caramelized onions. Crumble the fried bacon on top.
- Drizzle olive oil and balsamic vinegar over the salad and toss thoroughly.
