Ingredients
- 1 tbsp olive oil
- 1 cup fresh breadcrumbs
- 1 tbsp fresh lemon thyme leaves
- 1 kg black mussels
- 90g butter
- 5 springs lemon thyme
- 5 pieces lemon wedges
- 4 cloves garlic, chopped
- Salt and pepper to taste
- Anchovies (optional)
Method
- Use the extra breadcrumbs mixture from the roasted eggplants recipe.
- Boil the thyme, lemon and mussels in a pot for 5 minutes. While waiting, fry the garlic in olive oil.
- Remove the mussels from the pot and toss them in the olive oil mixture.
- Arrange on a plate and cover with breadcrumbs.
Food Notes
- The combination of lemon and thyme will reduce the strong smell of seafood.
