Mussels with Garlic Butter

Ingredients

  • 1 tbsp olive oil
  • 1 cup fresh breadcrumbs
  • 1 tbsp fresh lemon thyme leaves
  • 1 kg black mussels
  • 90g butter
  • 5 springs lemon thyme
  • 5 pieces lemon wedges
  • 4 cloves garlic, chopped
  • Salt and pepper to taste
  • Anchovies (optional)

Method

  1. Use the extra breadcrumbs mixture from the roasted eggplants recipe.
  2. Boil the thyme, lemon and mussels in a pot for 5 minutes. While waiting, fry the garlic in olive oil.
  3. Remove the mussels from the pot and toss them in the olive oil mixture.
  4. Arrange on a plate and cover with breadcrumbs.

Food Notes

  • The combination of lemon and thyme will reduce the strong smell of seafood.
