Mud Pie

Mud Pie Preparation Time: 10 minutes

Serves: 8

Ingredients

Crust

  • 250g plain Digestive biscuits
  • 125g unsalted butter
  • 1 tbsp ground cinnamon
  • (Alternatively, you can use Kebbler chocolate pie crust)

Filling

  • 300g dark chocolate
  • 90g butter
  • ¼ cup strong black coffee
  • 1½ cups thickened cream
  • ½ cup extra thickened cream
  • 2 tbsp icing sugar
  • 2 tbsp cocoa powder
  • 2 tbsp coffee powder

Method

Crust

  1. Brush a 23cm flan tin with melted better or oil.
  2. Blend the biscuits until finely crushed, then add the butter and cinnamon and blend again.
  3. Press the mixture into the base and sides of the tin.
  4. Use the base of a glass to smoothen it.
  5. Pop it in the refrigerator.

Filling

  1. Melt the chocolate, butter and coffee in a double boiler (place a saucepan of water over the fire and place a smaller saucepan with the chocolate, butter and coffee in the water).
  2. Leave to cool for 10 minutes.
  3. Whip the thickened cream and fold it into the chocolate mixture.
  4. Pour the mixture onto the crust and freeze.
  5. When ready to serve, top with the extra thickened cream and dust with icing sugar, cocoa powder and coffee powder

Food Notes

  • Good coffee like Illy or Lavazza makes all the difference.
