Ingredients
Crust
- 250g plain Digestive biscuits
- 125g unsalted butter
- 1 tbsp ground cinnamon
- (Alternatively, you can use Kebbler chocolate pie crust)
Filling
- 300g dark chocolate
- 90g butter
- ¼ cup strong black coffee
- 1½ cups thickened cream
- ½ cup extra thickened cream
- 2 tbsp icing sugar
- 2 tbsp cocoa powder
- 2 tbsp coffee powder
Method
Crust
- Brush a 23cm flan tin with melted better or oil.
- Blend the biscuits until finely crushed, then add the butter and cinnamon and blend again.
- Press the mixture into the base and sides of the tin.
- Use the base of a glass to smoothen it.
- Pop it in the refrigerator.
Filling
- Melt the chocolate, butter and coffee in a double boiler (place a saucepan of water over the fire and place a smaller saucepan with the chocolate, butter and coffee in the water).
- Leave to cool for 10 minutes.
- Whip the thickened cream and fold it into the chocolate mixture.
- Pour the mixture onto the crust and freeze.
- When ready to serve, top with the extra thickened cream and dust with icing sugar, cocoa powder and coffee powder
Food Notes
- Good coffee like Illy or Lavazza makes all the difference.
