Steamed Soft Tofu with Minced Meat and Diced Prawn in Chili Bean Paste Garlic SauceCooking Time: 15 minutes

Ingredients

  • 1 piece tofu
  • 100g minced meat (pork or chicken)
  • 100g medium prawns, diced
  • ½ tsp chili paste
  • ½ tsp bean paste
  • 1 tsp chopped garlic
  • ½ tsp sugar
  • 2 tbsp cooking oil
  • ½ tsp light soya sauce
  • ½ cup water
  • Cornflour mixed with water
  • Salt

Marinade

  • One pinch salt, pepper and cornflour
  • 2-3 drops sesame oil

Garnishing

  • 3-4 whole shallots, thinly sliced and deep-fried until golden brown
  • 1 stalk spring onion, finely chopped

Method

  1. Marinate the meat and set aside for ½ hour.
  2. In a pot/wok/steamer, steam the tofu for about 5 minutes. Remove the excess water and set aside.
  3. Heat up the oil in a pan. Add the garlic, bean paste and chili. Stir briefly until the garlic is lightly browned.
  4. Add the meat and stir-fry for 2-3 minutes. Add the water, soya sauce and sugar.
  5. After 2-3 minutes, add the diced prawns. Stir briefly until the prawns are cooked. Add salt and immediately stir in the cornflour paste to lightly thicken the sauce.
  6. Pour the sauce over the tofu and garnish with the fried shallots and spring onions.

Food Notes

  • The sauce can be prepared beforehand, heated up and poured over the tofu prior to serving.
  • Add a little of water if you are reheating to ensure that the sauce has the right consistency.
