Ingredients
- 8 canned smoked mussels
- 8 pitted prunes
- 8 rashers of smoked streaky bacon
- 8 1″ by 1″ strip of Edam cheese
- 16 toothpicks
Method
- Oil a baking tray. Cut each rasher of bacon in half and set aside.
- Wrap one slice of halved bacon around a mussel and secure it with a toothpick. Do the same with three more mussels. With the remaining four mussels, pair each with a slice of cheese before repeating the above process. Do the same for the prunes.
- Place the wrapped mussels and prunes on the baking tray and slip under a hot grill until the cheese melts and the bacon turns crispy.
- Serve hot on a bed of lettuce with a dip of your choice.
Food Notes
- Cold, tart dips make a good accompaniment to this rich starter.
- Streaky bacon is a better choice because it keeps everything moist. Back bacon may turn dry and chewy under the grill.
