Fruits of Fancy

I got this recipe off a close friend. The only modification I have made to it is reducing the sugar content. As I mentioned before, I am very particular about how much sugar and salt my family consumes!

I have a lot of fun baking this pie! The choice of fruits is entirely up to you so play around with the different combinations of colours, textures and tastes. I like using strawberries, peaches and kiwi because the fruits’ respective colour and taste complement each other and more importantly, the cheese filling. The most time consuming bit for most first-timers would probably be slicing the fruits and arranging them. It is so easy to get carried away when you are ‘designing’ your pie but this is also a great time to explore your creativity!

I never planned to submit this recipe to The Weekend Chef, though. A friend had actually asked me to bake two of these pies for her daughter’s birthday party and I was wrist-deep in dough, when my son (who is part of the TWC team) strolled into the kitchen and began snapping pictures. He brought a few slices for the rest of the team and came home with a request for the recipe! Most people have bought this pie from bakeries and wouldn’t dream of baking it themselves because of the assumed intricacy involved. Don’t be intimidated! It is very simple to make and the payoff is well worth the time!
