Tau Fu Fah

Ingredients

  • 300g soya beans (soaked for about 6 hours)
  • 3 litres / 12 cups water
  • ¾ tsp tau fu fah curdling powder
  • 120 ml boiling water
  • ½ tsp vanilla essence

Syrup

  • 300g sugar
  • 125ml water
  • 1 thin slice of ginger
  • Few pieces of pandan leaves

Method

  1. Blend the soaked soya beans with 5 cups of water and strain. Add the remaining water and squeeze out the milk with a cheesecloth bag.
  2. Mix the tau fu fah curdling powder with the boiling water. Set aside.
  3. Pour the soya milk into a pot and put to boil. Keep stirring until it reaches boiling point. Add in the vanilla essence.
  4. Pour the boiling soya milk into a pot. Pour in the tau fu fah curdling powder mixture and stir well. Cover the pot and set aside for about 30-45 minutes for it to set.
  5. Boil the sugar, water, ginger and pandan leaves until suger dissolves into a syrupy mixture. When it cools, strain the mixture.
  6. Spoon the tau fu fah into a bowl, pour the syrup on top and serve.
