A Breath of Fresh Air

If you’re anything like me, the weekend is probably your only chance to spend some quiet time either alone or with loved ones. And that too, in between the long overdue housework, never-ending errands and obligatory appearances at social events. No surprise then that the very thought of entertaining can raise your blood pressure to alarming levels. The irony is, enjoying a great meal with family and friends can actually help you relax faster and better. The secret lies in choosing a style that’s fun and fuss-free.

When I was asked to contribute to The Weekend Chef, I decided to steer clear of sit down meals for two reasons. One, we’re always sitting around a table to eat. Two, we spend a good part of our lives indoors so it’s about time we paid homage to Mother Nature. And so I chose the humble, but eternally successful barbecue.

I love barbecues! They’re relaxed, the guest list can be miles long, new friendships blossom and most importantly, cooking is a breeze. All you need is meat, seafood, a variety of vegetables, and of course, fantastic homemade sauces. Just be careful not to go overboard. A barbecue is an occasion where people walk around and mingle. Rich, complicated food will only ruin the light-hearted mood.

Since barbecues are so informal, perfection is unnecessary and unwelcome. You don’t need to have matching cutlery or your best china. You can even throw the host/ess-guest etiquette out of the window and allow your guests to help out if they offer! And believe me, they will because it’s always more fun to get involved in the cooking. In fact, the most interesting conversations are often struck up over the barbecue pit!

The meals I’ve chosen are super simple - a few vegetables, one or two meats or seafood and a homemade sauce. If you have enough time, dice a few different cheeses as an appetizer or throw a fruit salad together for dessert. Barbecues come with only one rule - have fun!
