Payasam

Payasam Preparation time: 10 minutes
Cooking time: 20 minutes
Serves: 3-4

Ingredients

  • 1 cup cooked rice (use the stove instead of a rice cooker, so the water doesn’t completely evaporate)
  • 1 packet coconut powder mixed with 1 cup warm water
  • ½-1 cup melted Jaggery/palm sugar
  • ¾ cup ghee
  • 2-3 pods powdered cardamon
  • 2 tbsp raisins/sultanas
  • 2 tbsp cashew nuts

Method

  1. In a heavy-bottom pan, heat ¼ cup ghee and fry the cashew nuts until light golden brown. Add the raisins and fry for a few more seconds. Drain and keep aside.
  2. In the same ghee, mix the rice, coconut milk and jaggery. Cook until it starts to thicken.
  3. Add the remaining ghee, cardomon, fried cashew nuts and raisins.
  4. Serve either hot or cold.
