Ingredients
- 1 cup cooked rice (use the stove instead of a rice cooker, so the water doesn’t completely evaporate)
- 1 packet coconut powder mixed with 1 cup warm water
- ½-1 cup melted Jaggery/palm sugar
- ¾ cup ghee
- 2-3 pods powdered cardamon
- 2 tbsp raisins/sultanas
- 2 tbsp cashew nuts
Method
- In a heavy-bottom pan, heat ¼ cup ghee and fry the cashew nuts until light golden brown. Add the raisins and fry for a few more seconds. Drain and keep aside.
- In the same ghee, mix the rice, coconut milk and jaggery. Cook until it starts to thicken.
- Add the remaining ghee, cardomon, fried cashew nuts and raisins.
- Serve either hot or cold.
