Food Notes
- When making spaghetti, you have a choice of either fresh or dry. 500gm of dried pasta should serve 4-6 persons. Boil 8 litres of water in a deep pot, add 1 tablespoon of salt and 1 tablespoon of oil.
- Throw in the spaghetti when water is boiling and keep stirring until al-dente. There are only two methods I know to determine if the spaghetti is al-dente. The first involves taking a strand and slurping it up quickly. If it goes into the mouth smoothly, then it’s cooked. The second method, I borrowed from a movie. Take the cooked pasta, stir in the sauce and throw it against a wall (preferably white). If it sticks, then it’s cooked.
- But there’s a third and simpler method. Read the instructions on the wrapper. If it says 12 minutes cooking time then it should be al-dente after 12 minutes.
- Remove the pasta from the pot, put it on a plate, mix a little butter or margarine in it, add some finely chopped English parsley and a bit of salt. Some of you may even think of indulging yourself with chopped chili padi.
- Serve it with the Chicken Fricassee.
- Another tip - always try to serve the meal hot. It makes quite a difference.
